This was an excellent lemony fresh and crisp salad. Used the Parmesan as a garnish as instructed, but his salad would also be great with shaved Parmesan mixed throughout. In future I will also try adding in some toasted walnuts to give more body and protein.

Three of my favorite things.... lemon, fennel, radicchio... excellent crunchy salad. Definitely added a good amount of parm to the mix..., and more radicchio as well. Great accompaniment to bone-in- chic breasts baked with Prosciutto and rosemary tucked under the skin. Lovely September Sunday meal in snowy Montana!

Not sure how this could beat the Fennel Apple Celery Salad, which is amazing, particularly with blue cheese %20Search%20Recipe%20Card&pgType=search&rank=10

I made this last week to take to a potluck. It took me considerably longer than 15 minutes to clean & chop the vegies and prepare the dressing (and I am not a novice). The results were terrific, enjoyed by all. Cautionary note - should only be made at the height of harvesting season, otherwise, it's a $$ extravagance.

Ina Garten has a great recipe for celery salad which does include the walnuts another reader suggested. I like to add cherry tomatoes for color.

Made half recipe, plenty and makes leftovers for me. Works well for lunch next day or adding to dinner salad. Did not use basil or radishes or radicchio. Radishes wd be good.

Didn’t have radicchio or parsley on hand, Substituted with chopped spinach and kale, did not strain out garlic with dressing was still amazing!

Great bright and crunchy salad when you don’t want a lettuce based salad

Dill instead of basil and parsley

Such a lovely fresh salad! We made as directed and it was so easy and quick; it’s a great way to change up your salad greens when you have salads a lot. Would absolutely make again

What a tasty, fresh salad! I don’t even like fennel and I still enjoyed this dish. We didn’t use the optional radicchio or the Parmesan (I’m allergic to dairy). We added lots of sliced radishes and topped the salad with some tuna to add a little protein to the mix. With a nice cracker or bread, this is a delicious healthy lunch option. Also goes will with anchovies if you want an additional kick.

A very simple step that greatly improves raw celery (at least for those bothered by the strings) is to peel the ribs as you would a skinned vegetable (a carrot, say). Depending on how fastidious you want to be, you may need to slice each rib in half lengthwise before peeling the “inside” side.

I think pistachios would be a wonderful addition.

Fantastic dressing

Made this for a small dinner party. Followed the recipe. Used small home grown fennel bulbs which turned out to be mild tasting. Hard to detect the licorice flavor. It’s an ok salad. I actually preferred it the second day with Parmesan slivers. Fennel is very easy to grow, by the way.

Made w/o basil, used parsley and French breakfast radish thinly sliced. Salad was delicious and fresh, next time I would use the basil and also add an element of heat, maybe red chili flakes?

Calabria

Definitely needs the parmesan - would add shaved next time instead of grated. Lovely winter salad!

My spin on this is an abundance of roughly chopped Castelvetrano olives and pieces of parm cut with the mandolin peppered throughout. I always add diced radishes. It's a highly customizable but always simple dish, however I recommend always adding the castelvetranos.

Lisa

Light, crunchy, flavorful summer salad that will be added to my repertoire. I mixed the parmesan and the herbs into the salad.

No basil, no radishes, no radicchio and forgot the parsley yet still tastes so good!

Made this recipe to go with Colu Henry's "Shrimp Linguine with Pistachio Bread Crumbs". Didn't use radicchio but sliced radishes and basil. Per another reviewer - mixed shaved parmesan cheese into salad as well as on top. Nice and crunchy and very flavorful. Delish!

Thanks Melissa, I followed all of your advice except for the apples and received compliments on this salad. The dressing needed sweetness to balance all the fresh acid and I added sazón in addition to salt and pepper to give it a more umami flavor. The shaved asiago throughout the entire salad and pepitas gave the salad more body as some of you mentioned. I served it with grilled shrimp, a soft boiled egg and a Mediterranean artisan bread loaf for a heartier dinner.
