Here’s a recipe for a simple green apple smoothie with kale and coconut milk. It is a healthy produce-forward snack or breakfast and a great way to start your day.

Why We Love This Recipe For Green Apple Smoothie

When Julia Mueller sent me a copy of her new cookbook, Let Them Eat Kale, I was so excited to look through it. She has incorporated kale into a whopping 75 recipes, but it was a simple green apple smoothie that really caught my eye. Probably because I am generally a big fan of any healthy green smoothie recipe. This apple smoothie is refreshing, easy to make and has just the right level of sweetness.

Key Ingredients For This Recipe

  • Green Apple: Green apples are preferred for this recipe but you could also use another crisp apple such as Honeycrisp.
  • Kale Leaves: Use regular curly kale for this recipe or Lacinato. Remove the ribs, wash and spin dry in a salad spinner
  • Grated ginger root: You could also buy pre-grated ginger cubes from Trader Joe’s if you don’t feel like grating it yourself.
  • Honey: I used honey but if you are vegan feel free to use pure maple syrup or agave and adjust the level of sweetness to suit your palate.
  • Coconut milk: Using coconut milk as the liquid in this smoothie naturally sweetens it up and makes it so creamy
  • Almond milk: Or your favorite plant-based milk.

Instructions to Make This Green Apple Smoothie

Combine the apple, kale, ginger, honey (or other sweetener), coconut milk and almond milk in a blender and puree until smooth.

Pro Tips For The Best Texture

Julia recommends a high-powered blender for apple smoothies. Make sure to process it for a little longer than you think to give it the creamiest consistency. The apple and kale tend to be a little gritty, so blending for a full minute really helps the texture!

Julia recommends that adding a frozen banana to it will make it creamier if you find the apple smoothie texture to be too rustic.

You can also add in a couple of ice cubes to make this icy!

Can this apple smoothie be made in advance?

Although a green apple smoothie like this will stay drinkable for up to 48 hours, I recommend drinking it immediately. If it separates, stir well.

Storing instructions:

If storing or making ahead, cover the glass with plastic wrap and place in the fridge until ready to drink.

Serving tips:

Description

A creamy green apple smoothie that’s packed with kale and ginger. It’s naturally gluten-free and is a healthy way to start your day!

Ingredients

  • 1 green apple, cored and chopped
  • 2 handfulls of kale leaves, washed
  • 1 to 2 teaspoons grated ginger root, preferably using a rasp-style grater
  • 1 tablespoon honey, pure maple syrup, dark or amber or agave, or to taste
  • 1/2 cup coconut milk
  • 1/2 cup almond milk

Instructions

  1. Combine apple, kale, ginger, honey or sweetener, coconut milk and almond milk in a blender and puree until smooth.

Notes

Variations to Try: I loved the texture of this apple smoothie, though Julia does say that adding a frozen banana to it will make it creamier if you find it too gritty.

    It’s funny, I have so many cookbooks and continue to buy more, yet I rarely cook from them. Or at least not as much as I’d like to. I love Julia’s book and this smoothie is the perfect summer to fall transition.

    I have the Pok Pok cookbook on my coffee table too! And yes, I read it like a novel! I have been in a rut with my smoothies lately, my standby is blueberries, pear, chia seed, spinach, coconut milk. I definitely want to try this green apple smoothie.
